Pineapple Muffins or Cake Directions:

Preheat the Oven:

  • Preheat oven to 350°F (175°C).
  • Line a muffin tin with cupcake liners or lightly grease a 9x13-inch baking dish for a cake.

Prepare the Batter:

  • In a large mixing bowl, combine the sugar-free yellow cake mix, crushed pineapple with juice, unsweetened applesauce, eggs, and vanilla extract.
