Oven-Baked Spinach and Feta Breakfast Casserole Directions:
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil.
Heat olive oil in a large skillet over medium heat and sauté onion and garlic for 5 minutes until translucent.
Add spinach and cook for 3 minutes until fully wilted, then remove from heat.
Whisk eggs, milk, salt, pepper, and nutmeg in a large bowl until completely smooth.
Stir in the spinach mixture, feta, and 1/4 cup mozzarella.
Pour evenly into the prepared 9x13-inch dish.
Sprinkle remaining 1/4 cup mozzarella evenly over the top.
Bake for 40 minutes until center is fully set and top is golden brown.
Cool for 10 minutes before slicing into 8 equal pieces.
