Preheat the oven to 300°F (150°C) and lightly grease a 9×13-inch ceramic casserole dish.
Place the pork loin roast in the center of the casserole dish with the fat side facing up and pat the surface dry with paper towels.
Sprinkle the dry onion soup mix evenly over the top and sides of the pork loin, pressing lightly so it adheres to the meat.
In a medium bowl whisk together the fat-free Greek yogurt and almond milk until smooth.
Pour the mixture over and around the pork loin and spoon some over the top so it is coated.
Cover the dish tightly with aluminum foil and seal the edges well.
Bake at 300°F (150°C) for 2 hours 30 minutes to 2 hours 45 minutes until the pork becomes very tender.
Remove the foil carefully and spoon some of the onion gravy from the dish over the pork.
Let the pork rest in the casserole dish for 10 minutes.
Slice across the grain into thick 1/2-inch slices and serve with the onion gravy spooned over each portion.
