Old Fashioned Potato Soup Directions:
Peel the potatoes and cut them into uniform 1/2-inch chunks.
Place the potatoes and chopped onion into a 4-quart pot and add enough water to barely cover the potatoes.
Stir in the salt and bring to a boil over medium-high heat.
Reduce to a gentle simmer and cook uncovered for 15 minutes until potatoes are fork tender.
Turn off the heat and carefully drain off most of the water, leaving 1/2 cup in the pot.
Add the light butter and stir until fully melted and coating the potatoes.
Pour in the fat-free milk and return the pot to low heat.
Gently stir, lightly mashing some of the potatoes while leaving visible chunks for texture.
Heat for 6 minutes until steaming and slightly thickened, without allowing the soup to boil.
Adjust seasoning with black pepper and additional salt if needed.
Serve hot in bowls. Optional: top each serving with an additional 1 tsp light butter if desired.
