Old-Fashioned Ground Beef and White Rice Casserole Directions:
Preheat oven to 350°F. Coat a 9x13-inch baking dish with nonstick cooking spray.
In a large skillet over medium heat, cook ground beef and onion 8 minutes until beef is browned. Add garlic during the final 30 seconds if using. Drain any liquid. Season with salt and pepper.
In a large bowl, combine uncooked rice, fat-free broth, both soups, diced tomatoes with juices, Worcestershire sauce, parsley, and thyme. Stir until blended.
Fold in cooked beef mixture and ½ cup of the shredded cheese.
Transfer mixture evenly into the prepared 9x13-inch dish.
Cover tightly with foil and bake 50 minutes.
Remove foil, sprinkle remaining ¼ cup cheese evenly over top, and bake uncovered 10 minutes until melted and rice is fully tender.
Rest 10 minutes before serving. Divide into 8 equal servings, approximately 1 ¼ cups each.
