Directions:
To start, we are going to chop the garlic and green onion as small as possible. In a container we place the butter along with the garlic, onion and a little salt and pepper.
The best time to combine these 3 ingredients is when the butter is somewhat melted, when they are integrated we reserve it.
Now we are going to make the dough, in a bowl we are going to put the flour, yeast, sugar, salt, egg, previously melted butter and warm milk.
We mix well until a dough is formed (if you see that it is a little dry you can add a little water), then we are going to sprinkle a lot of flour on the table and take the dough out of the bowl.
Try not to manipulate the dough so much, just make folds with your fingertips until you have a smooth and homogeneous dough.
Let's grab a plate suitable for the oven and put the dough there, cover it well with a towel and let it rest for 30 minutes or until it doubles in volume.
Meanwhile, you can cut the mozzarella cheese into slices that are not so thick but not so thin either, and also preheat the oven to about 180ºC.
Once the dough has doubled its volume, we are going to stretch it with our fingertips. It has to look like a pizza but a little thicker.
This is when we use a very sharp knife or a cutter to cut on the surface of the bread, the cuts have to be horizontal and vertical (as you see in the photo)
When the cuts have been made, with the help of a brush we are going to spread the egg yolk over the entire surface.
Then we are going to spread the garlic and green onion butter, also over the entire surface. Let it fit well into the cuts we made.
Now we are going to place the mozzarella in each cut that we made, if you see that it is very large or thick we will cut it so that it fits perfectly.
When you are done with the cheese, sprinkle black pepper and send it to the oven for about 25-30 minutes until it browns well and the mozzarella is well gratined.
When you take it out of the oven, let it rest for about 20 minutes and you can enjoy it however you like. The ideal is to eat it hot when the mozzarella is well melted, but I'll leave that up to your taste.
