  • In a large mixing bowl, combine warm water, sugar substitute, and yeast. Let it sit for 5 minutes until frothy.

  • Add self-rising flour mixture and salt to the yeast mixture and knead until a smooth and elastic dough forms.

  • Cover the bowl with a clean cloth and let the dough rest for 30 minutes to rise slightly.

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.

  • In a small bowl, mix light mozzarella cubes, chopped rosemary, and grated Parmesan cheese for the filling.

  • Divide the dough into 10 equal portions. Roll each into a long rope.

  • Flatten each rope slightly and place a small amount of filling in the center. Fold the dough over the filling and seal the edges, forming a ring shape similar to the reference photo.

  • In a large saucepan, bring 4 cups of water to a boil. Remove from heat and stir in the baking soda until dissolved.

  • Carefully place each pretzel ring into the baking soda bath for 30 seconds, then transfer them to the prepared baking sheet.
