Mock Potato Salad Directions:

Bring a large pot of water to a gentle boil.
Add the cauliflower florets and cook for 4 to 6 minutes, until tender but not mushy.
Drain the cauliflower well.
Spread the cauliflower on a clean kitchen towel or baking sheet.
Let it cool completely.
Stir the Greek yogurt, mayonnaise, and yellow mustard together in a large bowl until smooth.
Add the celery and stir to combine.
Add the cooled cauliflower.
Fold gently until the cauliflower is evenly coated.
Cover and refrigerate for at least 2 hours.
Stir gently before serving.
Serve chilled.
