Mexican Stuffed Shells Directions:

  • Cook the Pasta:

    • Preheat your oven to 350°F (175°C).
    • Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
  • Prepare the Filling:

    • In a large skillet, lightly spray with cooking spray and heat over medium heat.
    • Add the chopped onion and minced garlic, sautéing until softened, about 3 minutes.
    • Add the ground turkey to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat if necessary.
    • Stir in the taco seasoning and cook for another minute.
    • Add the black beans and 1/2 cup of salsa, mixing until well combined. Remove from heat.
  • Assemble the Shells:

    • Spread the remaining 1/2 cup of salsa in the bottom of a 9x13 inch baking dish.
    • Stuff each cooked pasta shell with the turkey and black bean mixture, placing the stuffed shells into the prepared baking dish.
  • Top and Bake:

    • Once all the shells are stuffed and arranged in the baking dish, sprinkle the shredded Mexican cheese blend evenly over the top.
    • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve:

    • After baking, let the shells cool slightly. Top each shell with a dollop of fat-free Greek yogurt and sprinkle with chopped cilantro, if desired.
    • Serve hot.
