Mexican Stuffed Shells Directions:

Cook the Pasta:
- Preheat your oven to 350°F (175°C).
- Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.

Prepare the Filling:
- In a large skillet, lightly spray with cooking spray and heat over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened, about 3 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat if necessary.
- Stir in the taco seasoning and cook for another minute.
- Add the black beans and 1/2 cup of salsa, mixing until well combined. Remove from heat.

Assemble the Shells:
- Spread the remaining 1/2 cup of salsa in the bottom of a 9x13 inch baking dish.
- Stuff each cooked pasta shell with the turkey and black bean mixture, placing the stuffed shells into the prepared baking dish.

Top and Bake:
- Once all the shells are stuffed and arranged in the baking dish, sprinkle the shredded Mexican cheese blend evenly over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve:
- After baking, let the shells cool slightly. Top each shell with a dollop of fat-free Greek yogurt and sprinkle with chopped cilantro, if desired.
- Serve hot.
