For Homemade Mashed Potatoes:
3 large russet potatoes (approximately 2 cups when mashed) (Idaho Potatoes)
Salt, to taste (Morton)
Black pepper, optional (McCormick)
2-3 tablespoons hot water or fat-free milk, optional (Fairlife Fat Free Milk)
For the Potato Cakes:
2 cups homemade mashed potatoes (prepared as above)
1 large egg (Eggland’s Best)
¼ cup green onions or chives, finely chopped (Dole)
3 tablespoons all-purpose flour or breadcrumbs (Progresso Plain Breadcrumbs)
1 teaspoon garlic powder (McCormick)
½ teaspoon onion powder (McCormick)
Salt and pepper, to taste (Morton / McCormick)
1 tablespoon butter or vegetable oil, for frying (Land O’Lakes Light Butter or Bertolli Extra Light Olive Oil)
Sour cream or ketchup, for serving, optional (Daisy Light Sour Cream / Heinz No Sugar Added Ketchup)
Optional Add-Ins:
½ cup cooked bacon crumbles (Oscar Mayer Real Bacon Bits)
1 tablespoon chopped parsley (Dole)
¼ cup parmesan cheese (Kraft Grated Parmesan)
