Lemon Oatmeal Cookies Directions:

  • Preheat your oven to 350 degrees F and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In the bowl of your stand mixer, cream together the unsweetened applesauce, granulated Stevia, and monk fruit sweetener until well combined. Add in the egg and blend until smooth.
  • Stir in the lemon zest, lemon juice, and vanilla extract until well combined.
  • Gradually mix in the dry ingredients until just combined, being careful not to overmix.
  • Gently fold in the rolled oats until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving room for spreading.
