Lemon Muffins Directions:

Preheat and Prepare:

  • Line a 12-cup muffin tin with paper liners or lightly coat with non-stick spray.

Mix Dry Ingredients:

  • In a large bowl, whisk together the flour, sugar-free sweetener, baking powder, baking soda, and salt.

Mix Wet Ingredients:

  • In another bowl, combine the lemon zest, lemon juice, unsweetened applesauce, Greek yogurt, egg, and vanilla extract.

Combine and Bake:

  • Pour the wet ingredients into the dry ingredients and stir until just combined (avoid overmixing).
  • Divide the batter evenly among the muffin cups.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Make the Glaze (Optional):

  • In a small bowl, whisk together the sugar-free powdered sweetener and lemon juice until smooth.
  • Drizzle over cooled muffins.

Cool and Serve:
