If using, add the sliced onion and baby carrots evenly over the potatoes.

Pour the Italian dressing evenly over the potatoes and vegetables.

Sprinkle with salt and gently stir to coat all ingredients evenly.

Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the potatoes are fork-tender but still hold their shape.

Stir gently to redistribute the dressing and herbs.

If using, stir in the butter immediately before serving until melted and glossy.

If desired, sprinkle with grated Parmesan or Romano cheese just before serving.

Taste and adjust salt if needed, then serve warm with some of the cooking juices spooned over the top.
