Italian Herb Potatoes Directions:

  • Lightly coat the inside of a 4-quart or larger slow cooker with nonstick spray or oil.

  • Place the prepared potatoes in an even layer inside the slow cooker.

  • If using, add the sliced onion and baby carrots evenly over the potatoes.

  • Pour the Italian dressing evenly over the potatoes and vegetables.

  • Sprinkle with salt and gently stir to coat all ingredients evenly.

  • Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the potatoes are fork-tender but still hold their shape.

  • Stir gently to redistribute the dressing and herbs.

  • If using, stir in the butter immediately before serving until melted and glossy.

  • If desired, sprinkle with grated Parmesan or Romano cheese just before serving.

  • Taste and adjust salt if needed, then serve warm with some of the cooking juices spooned over the top.
