Inside-Out Banana Bread Oatmeal Bowl Directions:
Lightly coat the inside of a 4–6 quart slow cooker with nonstick spray.
Add rolled oats and pour in almond milk, stirring once to evenly distribute.
Place 5 peeled bananas upright in the oats and gently press them down so they remain vertical.
Cover and cook on LOW for 7 hours until oats are thick and bananas are very soft.
After 7 hours, place the remaining peeled banana upright in the center of the cooker, keeping the top slightly exposed.
Cover and cook an additional 45 minutes until the center banana is softened and lightly caramelized.
Mash the 5 fully cooked bananas into the oatmeal and stir until smooth and creamy.
Spoon oatmeal into 6 serving bowls (about 1¼ cups each).
Carefully transfer the softened center banana to the middle of one serving bowl for presentation.
Top each serving with ½ teaspoon light butter and sprinkle evenly with chopped walnuts and cinnamon.
Drizzle with honey if desired and serve hot.
