Healthy Taco Casserole Directions:

  • Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
  • In a large skillet over medium-high heat, cook the ground chicken breast until browned, breaking it apart with a spoon as it cooks.
  • Add the diced onion and cook until translucent.
  • Stir in the taco seasoning and taco sauce, mixing well.
  • Add the corn, black beans, and cook until everything is heated through.
  • Spoon half of the meat mixture into the prepared casserole dish. Spread a thin layer of fat-free sour cream over the top, then sprinkle with half of the fat-free shredded cheddar cheese.
  • Repeat with the remaining meat mixture, sour cream, and cheese.
  • Bake for 15 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and top with diced tomatoes and green onions.
  • Serve hot.
