Grilled Chicken and Vegetable Stir-Fry Directions:
Slice or chop the pre-grilled chicken breasts into bite-sized pieces. Wash and chop the zero-point vegetables into evenly sized pieces.
Heat the olive oil in a large skillet or wok over medium-high heat. Add the chopped vegetables to the skillet and sauté for a few minutes until they start to soften and become tender-crisp.
Once the vegetables are slightly cooked, add the sliced grilled chicken to the skillet. Stir well to combine with the vegetables.
If desired, sprinkle additional seasonings or sauces over the chicken and vegetables for extra flavor. To create a sauce without adding extra calories, pour a splash of water into the skillet and stir to combine. This will help moisten the ingredients and create a light sauce without the need for additional oil or high-calorie sauces.
Continue cooking the chicken and vegetables, stirring occasionally, until everything is heated through and well combined. Be careful not to overcook the vegetables, as they should retain their vibrant colors and crisp texture.
Once the chicken and vegetables are cooked to your liking, remove the skillet from the heat. Serve the stir-fry immediately, either on its own or over a bed of cooked rice, quinoa, or cauliflower rice for a complete and satisfying meal.
