Greek Pastitsio Directions:

  • Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.

  • Cook pasta in salted boiling water until al dente. Drain well.

  • Mix hot pasta with egg whites and half of the parmesan cheese. Spread evenly in the baking dish.

  • Heat olive oil in a large pan over medium heat. Add onion and cook for 4 minutes until softened.

  • Add garlic and cook for 30 seconds. Add ground beef and cook until fully browned.

  • Stir in tomato paste, crushed tomatoes, cinnamon, clove, salt, and pepper.

  • Reduce heat to low and simmer uncovered for 35 minutes until thick.

  • Spread meat sauce evenly over the pasta layer.

  • Melt light butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.

  • Gradually add warm milk, whisking constantly until smooth and thick.

  • Remove from heat. Stir in nutmeg, remaining parmesan, salt, and pepper.

  • Let cool for 5 minutes, then whisk in egg yolks.

  • Pour béchamel evenly over meat sauce and smooth the top.

  • Bake uncovered for 40 minutes until lightly golden.

  • Rest for 30 minutes before slicing.
