Reduce heat to low and simmer uncovered for 35 minutes until thick.

Spread meat sauce evenly over the pasta layer.

Melt light butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.

Gradually add warm milk, whisking constantly until smooth and thick.

Remove from heat. Stir in nutmeg, remaining parmesan, salt, and pepper.

Let cool for 5 minutes, then whisk in egg yolks.

Pour béchamel evenly over meat sauce and smooth the top.

Bake uncovered for 40 minutes until lightly golden.
