Grandma’s Lemon Icebox Cake Directions:

Clear space in the refrigerator for one 9x13-inch glass baking dish.
In a large mixing bowl, whisk the pudding mix and cold milk for 2 minutes until smooth and thick.
Whisk in the lemon zest and lemon juice if using.
Fold in 4 oz of the whipped topping with a spatula until fully combined.
Arrange one full layer of graham crackers in the bottom of the 9x13-inch dish, breaking pieces to fully cover the surface.
Spread one-third of the lemon pudding mixture evenly over the graham crackers.
Add a second full layer of graham crackers.
Spread another one-third of the pudding mixture evenly.
Add a third full layer of graham crackers.
Spread the remaining pudding mixture evenly over the top.
Spread the remaining 4 oz whipped topping into an even layer.
Cover tightly and refrigerate for at least 4 hours or overnight.
Cut into 12 equal squares, each approximately 3 x 4 1/3 inches, and serve chilled.
