Fried Mushrooms Directions:

  • Wipe mushrooms clean with a damp paper towel and slice evenly.

  • Prepare three bowls:

    • First bowl: combine chickpea flour, garlic powder, onion powder, salt, and pepper.

    • Second bowl: lightly whisk egg whites until foamy.

    • Third bowl: spread panko breadcrumbs evenly.

  • Coat mushroom slices:

    • Dredge in chickpea flour, shaking off excess.

    • Dip into egg whites to coat completely.

    • Press into panko breadcrumbs to adhere.

  • Heat a large nonstick skillet over medium-high and spray generously with avocado oil spray.

  • Cook mushroom slices in batches, turning frequently, for 3–4 minutes until golden brown and crisp.

  • Transfer mushrooms to a plate lined with paper towels.

  • Sprinkle with salt and garnish with chopped parsley. Serve hot.
