Flourless Oat & Chia Bread Directions:

  • In a bowl, mix chia seeds and water. Let sit for 10 minutes until gel-like.

  • Blend oats in a blender or food processor until finely ground into flour.

  • Add baking powder and salt to oat flour and pulse briefly.

  • In a bowl, combine chia gel and oat flour mixture. Stir well to form a thick batter.

  • Let the mixture rest for 5 minutes.

  • Pour into a loaf pan lined with parchment paper.

  • Bake at 350°F (175°C) for 45–50 minutes, until firm and lightly golden.

  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool for 1 hour before slicing.
