  • Preheat oven to 350°F.
  • In a large bowl, combine the self-rising flour. In a medium bowl, whisk together 1 1/2 cups Greek yogurt and 1 tbsp vanilla extract.
  • Add the yogurt mixture to the flour and stir well with a wooden spoon until combined. Knead the dough in the bowl by hand for about 2 minutes until smooth. If sticky, add more flour, 1 tbsp at a time, until manageable.
  • Place a large piece of parchment paper on your work surface and dust lightly with flour. Roll out the dough into a 12 x 9-inch rectangle.
  • Sprinkle the dough evenly with Swerve brown sugar replacement and ground cinnamon, ensuring even coverage.
  • Starting from the long side, roll the dough tightly into a 12-inch-long roll using the parchment paper to assist. Slice into 12 (1-inch) pieces.
  • Arrange the slices in an 11 x 7-inch baking dish coated with cooking spray. Bake for 22–25 minutes, or until lightly browned.
