Easy Cloverleaf Rolls in Muffin Tin Directions:

  • In a bowl, combine warm almond milk, sugar substitute, and yeast. Let it sit for 5-10 minutes until foamy.
  • Melt 6 tablespoons of light butter and let it cool slightly. Add the melted butter, whole wheat flour, salt, and egg to the yeast mixture.
  • Mix the dough until it comes together. Knead for a few minutes until smooth.
  • Cover the dough and let it rise in a warm place for about an hour, or until doubled in size.
  • Preheat the oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray.
  • Punch down the dough and divide it into small portions. Roll each portion into a ball.
  • Place three dough balls in each muffin cup, creating a cloverleaf pattern.
  • Cover the muffin tin and let the rolls rise again for 20-30 minutes.
  • Brush the rolls with melted butter and sprinkle a pinch of salt on top.
  • Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown.
  • Remove from the oven and let the rolls cool slightly before serving.
