Easy Breakfast Casserole Directions:

  • Preheat the oven to 375°F.

  • Heat a large 12-inch oven-safe skillet over medium heat.

  • Add the turkey bacon and cook for 5-7 minutes until crispy. Remove the bacon to a paper towel-lined plate and set aside.

  • Add the lean ground turkey, onions, and red peppers to the skillet. Cook for 8-10 minutes until fully cooked, breaking the meat apart as it cooks. Remove the mixture and set aside.

  • Drain any excess fat from the skillet.

  • Add the thawed hash browns, granulated garlic, salt, black pepper, and red pepper flakes if using. Stir and cook for 5 minutes.

  • In a small bowl, whisk together the eggs and fat-free milk until smooth.

  • Spread the hash browns evenly in the skillet.

  • Top with the turkey mixture and cooked turkey bacon.

  • Sprinkle 1¼ cups of the reduced-fat cheese evenly over the meat and vegetables.

  • Pour the egg mixture evenly over everything in the skillet.

  • Place the skillet on the middle oven rack. Bake for 40-45 minutes until the center is set and not wobbly.
