Downeast Maine Pumpkin Bread Directions:

  • Preheat oven to 350°F (177°C). Grease or line with parchment two 9×5-inch metal loaf pans.

  • In a large bowl, whisk pumpkin, eggs, applesauce, oil, water, and Swerve until smooth.

  • In a medium bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and cardamom.

  • Add dry ingredients to wet and fold just until no dry streaks remain.

  • Divide batter evenly between the pans and smooth the tops.

  • Bake for 60 minutes; rotate pans at minute 30 and tent with foil at minute 40. Bake until a toothpick inserted in the center comes out clean.

  • Cool in pans for 15 minutes, then turn out to a wire rack. Cool completely before slicing.
