In a large bowl, whisk pumpkin, eggs, applesauce, oil, water, and Swerve until smooth.

In a medium bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and cardamom.

Add dry ingredients to wet and fold just until no dry streaks remain.

Divide batter evenly between the pans and smooth the tops.

Bake for 60 minutes; rotate pans at minute 30 and tent with foil at minute 40. Bake until a toothpick inserted in the center comes out clean.

Cool in pans for 15 minutes, then turn out to a wire rack. Cool completely before slicing.
