Crispy Fried Zucchini Directions:

  • Wash and slice the zucchinis into 1/4 inch rounds.
  • Set up a breading station with three shallow bowls. Fill the first bowl with flour. In the second bowl, whisk the egg whites or egg substitute. In the third bowl, combine the breadcrumbs, nutritional yeast (if using), garlic powder, onion powder, salt, and pepper.
  • Dip each zucchini slice into the flour, shaking off the excess, then into the egg whites, and finally into the breadcrumb mixture, ensuring each slice is well-coated.
  • Preheat the air fryer or oven to 400°F. If using an oven, line a baking sheet with parchment paper and spray lightly with cooking spray.
  • Place the zucchini slices in a single layer in the air fryer basket or on the prepared baking sheet. Spray the tops lightly with cooking spray.
  • Air fry or bake for 10-12 minutes, flipping halfway through, until golden brown and crispy.
