Creamy Potato Bake Directions:

• Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
• Peel and slice the potatoes into 1/8-inch thickness.
• In a bowl, whisk the almond milk, Greek yogurt, salt, and pepper until smooth.
• Add half of the potatoes to the baking dish in an overlapping layer.
• Pour half of the mixture over the potatoes.
• Sprinkle half of the cheese on top.
• Add the remaining potatoes in another overlapping layer.
• Pour the remaining almond milk mixture over the top and add the remaining cheese.
• Cover with foil and bake for 35–40 minutes, until the potatoes begin to soften.
• Remove the foil and bake for 20–25 minutes, until golden and tender.
• Rest the dish for 10–15 minutes before serving.
