Creamy Cheesecake Bars Directions:

  • Preheat the oven to 325°F. Line a 9x9-inch baking pan with parchment paper.

  • In a small bowl, mix self-rising flour, sugar-free maple syrup, and melted light butter until combined.

  • Press the mixture evenly into the bottom of the pan and bake for 10 minutes. Let cool slightly.

  • In a blender or food processor, combine cottage cheese, egg, vanilla extract, powdered peanut butter, lemon zest, lemon juice, and salt. Blend until completely smooth.

  • Pour the mixture over the cooled crust and spread evenly.
