Cream Cheese Spinach Puffs Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, mix together the chopped spinach, reduced-fat cream cheese, Parmesan cheese, minced garlic, black pepper, salt, and onion powder until well combined.
On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the sheet into 12 equal squares.
Place a spoonful of the spinach and cheese mixture in the center of each pastry square.
Fold each square over to form a triangle, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
Place the puffs on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 12-15 minutes, or until the puffs are golden brown and puffed up.
Remove from the oven and let cool slightly before serving.
Tips to Keep the Points Low:
Use reduced-fat cream cheese: This helps reduce the fat content and points.
Use light puff pastry: If available, use a light or reduced-fat version of puff pastry to lower the points.
Bulk up with more spinach: Adding more spinach to the filling can increase the volume without adding many points.
