Cowgirl Caviar Ingredients:

  • 1 cup canned black-eyed peas, drained and rinsed (Bush’s)

  • 1 cup canned cannellini beans, drained and rinsed (Goya)

  • 1 medium red bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 1 large cucumber, diced

  • 1/3 cup kalamata olives, roughly chopped (Pearl Olives)

  • 1/2 medium red onion, diced

  • 1/4 cup fresh mint, chopped

  • 1/4 cup fresh parsley, chopped

  • 1/2 cup reduced-fat feta cheese, crumbled (Athenos Reduced Fat)

For the Dressing:

  • 3 tbsp olive oil (Kirkland Signature)

  • 1/4 cup fresh lemon juice

  • 1 large garlic clove, minced

  • 2 tbsp red wine vinegar

  • 1 tsp honey

  • 1/2 tsp dried oregano

  • Salt

  • Black pepper
