Cowboy Quiche Directions:

  • Preheat oven to 400°F.

  • In a large skillet over medium-low heat, heat olive oil and cook onions, stirring occasionally, for 15-20 minutes until deep golden brown. Set aside to cool.

  • Cook center cut bacon in a skillet until chewy but not crisp. Chop into bite-sized pieces and set aside.

  • Roll out pie crust into a 9-inch pie pan.

  • In a large bowl, whisk eggs, fat free half and half, salt, and black pepper until fully combined.

  • Add cooked onions, chopped bacon, and reduced fat cheddar cheese. Stir to combine.

  • Pour filling into prepared pie crust and cover loosely with foil.

  • Place pie pan on a rimmed baking sheet and bake for 45 minutes.

  • Remove foil and bake an additional 10-15 minutes until top is golden brown and center is set.

  • Let quiche rest for 10-15 minutes before slicing and serving.
