Cinnamon Sugar Muffins Directions:

  • Preheat oven to 350°F. Spray a 6-cup muffin tin with cooking spray.

  • In a large bowl, whisk together flour, baking powder, ½ tsp cinnamon, and Stevia.

  • In another bowl, combine applesauce, egg, almond milk, vanilla extract, and melted butter.

  • Pour wet ingredients into the dry and stir until just combined. Do not overmix.

  • Evenly divide the batter into the muffin cups.

  • Bake for 20–22 minutes, until a toothpick inserted in the center comes out clean.

  • While still warm, sprinkle each muffin with the cinnamon-Stevia topping mixture.

  • Let cool for 5 minutes in the pan, then transfer to a wire rack.
