Chocolate Chip Pumpkin Bars Directions:

  • Preheat oven to 350°F. Spray a 9×13-inch pan with cooking spray.

  • In a medium bowl, mix the Kodiak mix, baking powder, baking soda, and pumpkin pie spice.

  • In a large bowl, whisk pumpkin puree, hot water, applesauce, and Swerve until smooth.

  • Add the egg and vanilla extract and whisk again.

  • Gradually add the dry mixture to the wet mixture, stirring just until combined.

  • Fold in half of the chocolate chips. Spread the batter evenly into the pan.

  • Sprinkle the remaining chocolate chips over the top.

  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  • Cool completely and cut into 18 bars (about 2×2 inches each).
