Chicken Parmesan Meatball Directions:

  • Preheat oven to 375°F (190°C).

  • Spray a 9x12 inch baking dish lightly with nonstick cooking spray, then add 1 tbsp olive oil and tilt to coat the bottom.

  • In a large bowl, combine ground chicken, crushed panko, onion powder, garlic powder, Italian seasoning, egg, Parmesan, and 1 cup mozzarella.

  • Mix thoroughly.

  • Roll mixture into 12 equal meatballs (about 2.5 inches each) and place them in the baking dish.

  • Let rest for 10 minutes while oven continues preheating.

  • Bake meatballs for 15 minutes.

  • Remove from oven, pour marinara sauce evenly over meatballs.

  • Return to oven and bake for 25 more minutes.

  • Remove, top with remaining 1 cup mozzarella.

  • Bake an additional 10–15 minutes or until cheese is melted and bubbling.
