Chicken Broccoli Alfredo Stuffed Shells Directions:

  • To prepare the homemade light Alfredo sauce, whisk together 1 cup unsweetened almond milk (Silk Unsweetened Almond Milk), 1 tbsp cornstarch, 1 tbsp grated Parmesan (Kraft Reduced Fat Grated Parmesan Cheese), a pinch of garlic powder, and a pinch of black pepper. Simmer over medium heat until slightly thickened. Set aside.

  • Preheat oven to 350°F (175°C).

  • Spray a 9 x 13 inch glass baking dish with baking spray.

  • In a large mixing bowl of at least 4-quart capacity, combine shredded chicken breast, chopped broccoli, garlic powder, half of the Italian cheese, half of the Parmesan cheese, salt, and pepper.

  • Stir until evenly mixed. Add ½ cup of the prepared light Alfredo sauce and stir until blended.

  • Spread the pasta sauce evenly over the bottom of the prepared baking dish.

  • Cook jumbo pasta shells according to package directions until al dente. Drain and cool slightly.

  • Fill each pasta shell with about 1.5 tablespoons of the chicken-broccoli mixture.

  • Arrange the filled shells in a single layer over the pasta sauce in the baking dish.

  • Pour the remaining ½ cup of light Alfredo sauce evenly over the shells.

  • Sprinkle the remaining Italian cheese and Parmesan cheese on top.

  • Bake uncovered for 25 minutes, until the cheese is melted and the dish is hot and bubbly.
