Cheesy Spinach and Mushroom Strata Directions:

  • Preheat oven to 350°F (175°C) and lightly grease a rectangular baking pan.

  • In a skillet, heat olive oil over medium heat. Add mushrooms and sauté for 5 minutes until golden.

  • Add spinach and cook for 2 minutes until wilted. Remove from heat.

  • Spread cubed bread evenly in the prepared baking pan.

  • Distribute the mushroom and spinach mixture over the bread.

  • Sprinkle shredded cheddar cheese evenly on top.

  • In a large bowl, whisk eggs, milk, salt, pepper, and nutmeg until smooth.

  • Pour the mixture evenly over the bread and vegetables.

  • Top with grated Parmesan cheese.

  • Cover with foil and bake for 30 minutes. Remove foil and bake 15 minutes more until golden and set.

  • Garnish with parsley before serving.
