Caprese Chicken Casserole Directions:

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly spray a baking dish with WW-compatible cooking spray.
  • Prepare the Chicken: Place the chicken breasts in the prepared baking dish. Season with salt, black pepper, and red pepper flakes (if using).
  • Top with Tomatoes and Garlic: Spread the minced garlic over the chicken breasts. Arrange the halved cherry tomatoes around and on top of the chicken.
  • Bake the Chicken: Drizzle the chicken and tomatoes with the olive oil. Pour the balsamic vinegar evenly over the chicken. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
  • Add Cheese and Basil: Remove the dish from the oven, sprinkle the shredded mozzarella cheese evenly over the chicken, and return to the oven. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve: Once baked, sprinkle the fresh chopped basil over the casserole. Let it cool slightly before serving.
