Canadian Cheese Soup Directions:

  • Heat a large heavy-bottomed pot over medium heat and cook the bacon for 3 minutes until lightly crisp.

  • Add onion, celery, garlic, and light butter; cook for 5 minutes until vegetables soften.

  • Add flour and cook for 2 minutes, stirring constantly until lightly golden.

  • Whisk in chicken stock, bring to a boil, boil for 1 minute, then reduce heat and simmer for 15 minutes.

  • Add milk and simmer for 15 minutes without boiling.

  • Remove from heat and stir in cheddar cheese, Tabasco sauce, Worcestershire sauce, salt, and pepper.

  • Blend with an immersion blender until mostly smooth and serve hot.
