Preparation
1. Peel and finely chop the onion.
2. Heat some oil and/or butter in a saucepan and add the onions and thyme and wait until the onions are translucent.
3. Cut the other vegetables into small or bite-sized pieces, add to the pot and sauté briefly. Add the vegetable broth and the can of tomatoes, add the cumin and heat it all up. Place the lid on the pot and simmer over low heat for 30 minutes.
4. Season with salt and pepper and serve.
