Butter Toffee Pretzels Directions:

  • Preheat the oven to 200°F. Lightly grease a large roasting pan with cooking spray and spread the pretzels evenly inside.

  • In a medium saucepan, combine brown sugar substitute, light butter, and sugar-free syrup. Bring to a boil over medium heat and boil for 5 minutes, stirring constantly.

  • Remove from heat and whisk in vanilla extract and baking soda; the mixture will foam vigorously.

  • Pour the hot toffee mixture over the pretzels and sprinkle half of the sugar-free toffee bits on top. Toss well to coat.

  • Bake for 1 hour, stirring every 15 minutes to ensure even coating.

  • Transfer the pretzels onto a sheet of wax paper and immediately sprinkle with the remaining toffee bits.

  • Let cool and harden for 1 hour before breaking into clusters.
