  • Preheat oven to 375°F (190°C).

  • In a large oven-safe skillet, cook lean ground beef over medium heat, breaking it apart with a spoon until browned. Drain if needed and set aside.

  • Add olive oil spray, onion, and cook 2 minutes. Add garlic and cook 1 more minute.

  • Return the beef to the skillet. Add salt, pepper, cumin, chili powder, paprika, cayenne, and water. Stir and cook for 4 minutes.

  • Add corn, black beans, and enchilada sauce. Stir to combine, then turn off heat.

  • Add tortilla pieces and mix gently until coated with sauce.
