  • Place cornstarch in a large zip-top bag, add chicken, and shake well to coat.

  • Beat the eggs in a shallow bowl.

  • Heat oil in a skillet over medium-high heat until shimmering.

  • Dip chicken pieces in egg, then sear in the skillet until golden brown and crispy on all sides.

  • Transfer chicken to the prepared pan, spreading pieces in a close, compact single layer without gaps.

  • In a medium bowl, whisk together sugar, ketchup, vinegar, soy sauce, garlic powder, and sea salt.

  • Pour sauce evenly over chicken.

  • Bake uncovered for 1 hour, turning chicken gently at least twice to allow sauce to thicken and caramelize on the pieces, creating a sticky, darker glaze as in the image.
