Amish Butter Pecan Icebox Bars Directions:

Preheat oven to 350°F (175°C) and lightly coat a 9x13-inch glass baking dish with nonstick spray.
In a medium bowl, mix graham cracker crumbs, 1/2 cup melted butter, sugar, and 1/4 teaspoon salt until evenly combined and sandy in texture.
Press mixture firmly into the bottom of the dish using a flat glass or measuring cup to create a compact crust layer.
Spread pecans on a baking sheet and toast in the oven for 6 to 8 minutes until fragrant, then cool and roughly chop.
In a bowl, whisk sweetened condensed milk, 3 tablespoons melted butter, vanilla extract, and 1/4 teaspoon salt until smooth.
Fold in 1 1/2 cups of chopped pecans.
Pour mixture evenly over the crust and spread to edges using a spatula.
Sprinkle remaining 1/2 cup pecans evenly over the top and press lightly.
Bake for 18 to 22 minutes until edges bubble and center is set but slightly soft.
Cool completely at room temperature for 1 hour.
Refrigerate covered for at least 3 hours until fully set.
Slice into 16 squares (each about 2.5 x 2.5 inches) and serve chilled.
