Arrange the bell pepper halves cut-side up in the bottom of a 5- to 6-quart slow cooker.
Place the lean Italian seasoned ground turkey, cooked brown rice, 1/2 cup marinara sauce, and 1/4 cup shredded mozzarella in a medium bowl.
Mix gently until evenly combined.
Spoon the filling evenly into the pepper halves.
Pour the remaining 1 cup marinara sauce around the peppers and lightly over the tops.
Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 1/2 to 3 hours, until the peppers are tender and the filling reaches 165°F in the center.
Sprinkle the remaining 1/4 cup mozzarella evenly over the stuffed peppers.
Cover and cook for 10 to 15 minutes, until the cheese is melted.
Carefully lift the stuffed peppers out with a large spoon or spatula.
Spoon a little sauce from the slow cooker over the top before serving.
