Place cubed pork evenly in the bottom of a 4–6 quart slow cooker.
Whisk soy sauce and hoisin sauce until smooth and pour over pork, stirring to coat evenly.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until pork is tender and easily pulled apart.
Add frozen stir-fry vegetables, pressing them into the sauce, and cook on HIGH for 35 minutes until heated through.
Cook spaghetti in boiling salted water for 9 minutes until al dente and drain well.
Shred pork into bite-sized pieces directly in the slow cooker and mix with vegetables and sauce.
Add cooked spaghetti and toss until evenly coated, adding 1–2 tbsp water if needed.
