Lay 4 slices of bread flat and divide the tuna mixture evenly over 2 slices, spreading to the edges.
Place 2 slices of cheese on each tuna-covered slice, slightly overlapping.
Top with the remaining 2 slices of bread and press gently to form 2 sandwiches.
Heat a nonstick skillet over medium heat.
Place sandwiches in the skillet and cook for 4 minutes until the bottom is golden and crisp, pressing lightly.
Flip and cook for another 4 minutes until the second side is golden and the cheese is fully melted.
Remove from heat, rest for 1 minute, then cut each sandwich in half.
Serve 2 sandwiches total, each sandwich cut into 2 halves (4 halves total).
