Whisk Dijon mustard, honey, and apple cider vinegar in a medium bowl until smooth and glossy.
Lightly coat the inside of a 6-quart slow cooker with nonstick spray.
Arrange pork chops in a single layer in the slow cooker, slightly overlapping if necessary.
Pour the honey mustard mixture evenly over the pork chops and turn once with tongs to coat both sides.
Cover and cook on LOW for 7 hours or HIGH for 4 hours until the pork is fork-tender and reaches at least 145°F (63°C).
For a thicker glaze, remove the pork chops, set slow cooker to HIGH, and simmer uncovered for 15 minutes until reduced.
Return pork chops to the slow cooker and spoon sauce over the top before serving.
