3-Ingredient Fried Cornmeal Mush Directions:

Lightly grease an 8x4-inch loaf pan with a thin layer of oil.
Whisk the cornmeal with 1 cup of the water in a bowl until completely smooth.
Bring the remaining 2 cups of water and salt to a gentle boil in a medium saucepan over medium heat.
Slowly pour the cornmeal mixture into the boiling water while whisking continuously.
Reduce heat to low and cook for 15 minutes, stirring frequently, until very thick and pulling away from the sides of the pan.
Transfer the thick mixture into the prepared loaf pan and smooth the top evenly.
Cool at room temperature for 30 minutes, then cover and refrigerate for 8 hours until fully firm.
Turn the chilled mush onto a cutting board and slice into 8 rectangles, each 1/2-inch thick and approximately 2x3 inches.
Heat 2 tablespoons oil in a large skillet over medium heat until shimmering.
Place slices in a single layer and fry 4 minutes per side until deep golden brown and crisp.
Transfer to a paper towel–lined plate and serve immediately.
