Slow Cooker Caramelized Onions Pasta Directions:
Thinly slice the onions.
Add the sliced onions to the slow cooker with the olive oil and salt.
Stir well so the onions are lightly coated.
Cover and cook on LOW for 8 to 10 hours, stirring occasionally, until the onions are deeply golden and caramelized.
About 30 minutes before the onions are done, stir in the minced garlic, dried thyme, dried rosemary, and vegetable broth.
Continue cooking until the mixture is fragrant and well combined.
Cook the pasta according to the package directions.
Before draining, reserve 1 cup of the pasta water.
Drain the pasta and add it to a large serving bowl.
Add the caramelized onions to the pasta.
Toss well, adding reserved pasta water a little at a time until the onions coat the pasta like a silky sauce.
Stir in the Parmesan cheese and black pepper.
Sprinkle with chopped fresh parsley just before serving.
Serve immediately.
