Creamy Southern Grits Directions:

  • In a medium pot, combine chicken broth and salt. Add 1 tablespoon butter and bring to a rapid boil over medium-high heat.

  • Once boiling, add grits and stir for 30 seconds.

  • Reduce heat to medium or medium-low, cover partially, and simmer 15 minutes for stone-ground (or 5 minutes for quick grits), stirring often.

  • Remove lid, add remaining 3 tablespoons butter, and stir until melted.

  • Add the fat-free half & half 2 tablespoons at a time, stirring well after each addition until fully blended.

  • Continue stirring until grits thicken and begin to bubble.

  • Remove from heat, taste, and adjust seasoning if needed.

  • Serve hot with desired toppings.
